Fix DAST API Postman example

Follow-up to har-example!2 (merged) and https://gitlab.com/gitlab-org/security-products/demos/api-dast/openapi-example/-/merge_requests/3

The MR updates the following to make this example work by default after forking it:

• Makes docker image version fixed to 20.10.16 instead of using stabe.
