feat: Update analyzer image releases to include minor builds

What does this MR do?

Update analyzer.yml to also generate minor image tags. Given v1.2.3, we currently only generate a MAJOR and PATCH, this will allow MINOR releases as well

• ✅ MAJOR 1
• 🆕 MINOR 1.2
• ✅ 1.2.3
