This MR bumps jackson-databind to the latest patch version.

It also sets DS_JAVA_VERSION to 11 as otherwise gemnasium-maven-dependency_scanning fails with a java language version error (from earlier pipeline: https://gitlab.com/gitlab-org/security-products/analyzers/gemnasium-gradle-plugin/-/jobs/2917233518) - will investigate this further.
