Update container-scanning gem version in fixtures on scanner update

Why is this change being made?

Recently (Use expectation fixtures for converter spec (!2760 - merged)) we have introduced specs that are using fixtures to verify converter output. Back then we have not added automatic updates of fixtures with new Gem version. This MR fixes that.
