What does this MR do?

In !1646 (merged) we changed gitlab-elasticsearch-indexer security path to the security mirror on gitlab.com, however, we didn't remove the override on the security_client method that generates a DEV client instead of the regular one.

This merge request reverts the revert and removes the override.
