Remove k6 binary from Docker Image

MR removes the k6 binary from the Docker image build to ensure license compliance.

Docker containers will still work as the GPT code pulls down a k6 binary at runtime, which is compliant.

Pipeline has been tweaked to still test the GPT Docker build itself to ensure it works.
