Update Mattermost to 5.39.0

What does this MR do?

This version of Mattermost includes contains a low level security fix and some improvements. The full changelog for this release is here.

Where should I update the documentation? notice that redirects to another page which looks like is not in this repo. Can you point me the directions? thanks!
