Remove `process_*` metrics from probes config

What does this MR do?

Implements gitlab#290765 (closed) :
process_* metrics that are currently exported via gitlab_exporter are either already exported by other services or not used.

They don't appear in Runbooks as well, so it shouldn't break our monitoring/alers.

We didn't find similar in Helm chart.

This is our first step to sunset (or at least shrink) the gitlab_exporter.
