Use `gitlab/knative` provider in fixtures in specs

Description

We recently made it possible to use gitlab/knative provider, instead of provider: name: triggermesh.

This merge request makes the switch in end-to-end tests, what is a prerequisite to changing that in documentation gitlab#32689 (closed)
