Investigate elastic search chart settings

Follow up to #33782 (closed)

Right now the way we deploy ES is pretty basic and we haven't looked into the chart configuration in depth.

Things to look into:

• number of replicas to schedule
• data retention policies (See https://www.elastic.co/guide/en/elasticsearch/reference/current/getting-started-index-lifecycle-management.html)
