Drop deprecated gitlab-exporter endpoint docs

What does this MR do and why?

This endpoint was deprecated in 13.x via https://gitlab.com/gitlab-org/gitlab-exporter/-/merge_requests/126.

So we should not use this in configuration examples anymore.
