Bump lefthook version to 1.0.1

What does this MR do and why?

Version 1.0.0 was apparently just pulled: https://rubygems.org/gems/lefthook

This results in this error when running bundle install:

Fetching source index from https://rubygems.org/
Your bundle is locked to lefthook (1.0.0) from rubygems repository https://rubygems.org/ or installed locally, but that version can no longer be found in that
source. That means the author of lefthook (1.0.0) has removed it. You'll need to update your bundle to a version other than lefthook (1.0.0) that hasn't been
removed in order to install.
