Use Utils::Override from Strategies::GroupSaml

Adds use of Utils::Override to methods in Strategies::GroupSaml

Why

If omniauth or omniauth-saml change these will give us an early warning.

Existing test coverage in ee/spec/lib/omni_auth/strategies/group_saml_spec.rb should be enough, but it is good practice to include these anyway.
