Remove refs to markdown_processing_examples in unit tests

What does this MR do?

This MR addresses this comment !68671 (comment 656533563) where we are dramatically changing the markdown_processing_examples and fixtures used in the markdown processing Golden Master tests.

This MR removes references to these fixtures from unit tests. It replaces the references with test values that are created within the unit test itself.
