Update direct-disk backup experimental snippet location in docs

What does this MR do?

As a follow-up to !66159 (merged) and based on #336659 (closed), this changes the location from a (personal namespace) snippet, to a gitlab-org/gitlab MR and adds instructions to use for the experimental script to back up repositories while marking as read-only.
