Refactoring in the Diffs app Stats component and utility

What does this MR do?

1. Refactors some legacy class names to GL Utility class names
2. Swaps a class name to data-testid because that's all it's used for.

Follow-up from !62445 (merged) where some concern was expressed that we weren't updating these things while we were modifying nearby code.
