Change markdown italic toolbar button to use `_` instead of `*`

What does this MR do?

We currently generate a * for italics when using the markdown italic toolbar button. In !37151 (merged) we added the ability to select text and press _ to add italics. Since the * key is used for bolding selected text, to be consistent the toolbar button will now generate _.
