Update Telemetry Docs: What data can be tracked table

What does this MR do?

This MR updates the What data can be tracked table with the following changes:

  • Remove database counts (this is now the same as Data Records)
  • Remove event funnels (removing this as it's more related to Data Team's reporting capabilities than Telemetry)
  • Rename PostgreSQL Data to Database Records
  • Rename Logs to Instance logs
  • Rename External services to Instance integrations
  • Add Instance settings

  2. Ensure a release milestone is set.
  3. If there has not been a technical writer review, create an issue for one using the Doc Review template.
