What does this MR do?

From a Slack discussion:

I was just looking at https://docs.gitlab.com/ee/administration/geo/replication/troubleshooting.html#very-large-repositories-never-successfully-synchronize-on-the-secondary-node and noticed we recommend using 10800 for gitlab_shell_git_timeout for large repositories to sync, but that seems to be the default in Omnibus? should we remove / update this?

  3. If there has not been a technical writer review, create an issue for one using the Doc Review template.
