Add note about protected variables

What does this MR do?

Our default behavior of checking the box to "protect variables" may not be friendly in context to the current documentation

• The MR includes necessary changes to maintain consistency between UI, API, email, or other methods
• Security reports checked/validated by a reviewer from the AppSec team
