Add feature flag project toggle to junit documentation

What does this MR do?

This MR adds an example to our documentation to toggle our JUnit feature for a given project.

Why are we doing this?

Users raised some questions about how to achieve this. This MR aims to reduce the friction by helping them to enable the feature for specific project until we improve the ~performance of this feature.
