Use replace mount with shallowMount in edit form specs

What does this MR do?

Currently working on converting issue confidentiality update to apollo. These components are being updated and need/want to use shallowMount and vue test utils in my feature MR. This MR cleans up a few specs i will need to work with by using vue test utils.
