Refactor tests to use nodes

What does this MR do?

In GraphQL, edges -> node notation can be written as nodes if there is no need for edges (which can have collection info, pagination, etc).

I think using nodes unless we need edges -> node makes tests more readable, so here is a quick refactor MR which I think makes these tests a bit nicer.
