Backport of "Load only needed snippet columns when backing up repositories"

What does this MR do and why?

This MR backports !261834 (merged) to 19.5 to prevent out-of-memory failures during repository backups on instances with large snippets.

The fix loads only the snippet columns needed to locate repositories (id, type, and project_id), avoiding unnecessary loading of snippet content.

A backport is done because the affected code exists on the stable branch.
