What does this MR do and why?

Add 2025-11-25 as supported MCP version; otherwise, 400 error is raised: https://log.gprd.gitlab.net/app/r/s/TIcbc

The changelog doesn't seem to contain breaking changes related to our server: https://modelcontextprotocol.io/specification/2025-11-25/changelog

Testing

npx -y @modelcontextprotocol/inspector npx fails to establish a connection with the server without these changes
