Doc: Mark Elasticsearch Go indexer as stable

What does this MR do?

During 12.3, the Elasticsearch Go indexer switched from beta status to stable. The older Ruby indexer was removed and Go indexer becomes the sole way to do Git-related indexing. However some documents weren't updated accordingly. This MR ensures the related docs are now up-to-date.
