Rename SaxDocument to CoberturaDocument

What does this MR do and why?

  • This MR renames the SaxDocument class from the our test coverage reports to CoberturaDocument to better reflect its' functionality

This is a preparation step to introduce a new CoverageDocument type for JaCoCo coverage reports.
