Add unique count metrics for Wiki events
What does this MR do and why?
Related to #470159 (closed).
This adds metrics for unique users and projects for wiki events. The total counts have already been migrated to internal events, so metric definitions for unique attributes are all that's missing.

How to set up and validate locally
- Run Internal events monitor for the new events.
