What does this MR do and why?

As explained in 1fc98d9f (comment 1956974738), the Grype scanner was removed in GitLab 17.0.

A troubleshooting entry about Grype in the 17.x docs may cause confusion.

This MR removes it. The content should be added to 16.x instead.
