What does this MR do?

This MR updates the Claude Models used in various AI-powered features in GitLab. These were previously changed in Update file ai_features.md (!150399 - merged) to show Claude-3; however, this was due to a misunderstanding and they should have been updated to Claude-2.1, and the list has been updated to properly reflect the models we are using.
