Add dynamic provider option AI gateway client

What does this MR do and why?

The code changes involve the removal of hard-coded values for the AI model provider and the default model name in the AiGateway::Client class. These values are now dynamically determined based on the availability of models and user preferences. Additionally, a new method, provider, is introduced to retrieve the provider name for a given model. These changes provide more flexibility and allow for future expansion of supported models and providers.
