Remove outdated info that version check is saving data from docs

What does this MR do and why?

As described in https://gitlab.com/gitlab-org/gitlab-services/version.gitlab.com/-/issues/37 we removed the storing of information that is sent with version checks. This MR updates the version check docs page accordingly.
