Remove product_category from 7d metrics yml

What does this MR do and why?

This MR removes product_category field from 7d metric configs. Only 7d removed here in order to split removal process, there are more than 2000 config files in total, this MR includes only ~400.

Reason

We discovered that product_category is not really used right now anyway (see #393366 (comment 1295122962), #393366 (comment 1295377452)). Adding the product_category is an effort every time a metric is created.
