Update dashboards schemas

What does this MR do and why?

Updates the dashboard schemas, so they are related to general analytics instead of specific product analytics.

Also adds in the yAxis property min which was added in Line chart visualizations axes don't start at 0 (!115458 - merged)

Also add missing options property on the DashboardPanel definition
