Update documentation to cover later Jira versions

What does this MR do and why?

The Jira integrations support the latest Jira versions. It looks like we didn't update the documentation when the latest Jira version was released. This is replacing the versions list with "v6.x and later". I'm confident that we will make sure that our integrations work with the latest Jira versions.
