Log the HTTP status code for GitLab for Jira App

What does this MR do and why?

As per #384497 (closed), #379675 (closed) and #352411 we want to improve logging (introduce logging of the request body) to get a better understanding of what is going on.

In order not to log sensitive information, we started by logging only the JSON schema and not the values.
