Add config to pods and test bucket config in staging

Context

Now that the charts and the buckets are created, we need to add the credentials to staging and prod.

Deliverables (updated Nov. 13th, 2025)

• Update SQL traffic capture configuration from the GitLab app.
  • Update DB traffic capture config (!212610 - merged)
• Update SQL traffic capture configuration from Charts.
  • Update database traffic capture config (gitlab-org/charts/gitlab!4636 - merged)
• Add env-specific variables (project_id and bucket) to https://gitlab.com/gitlab-com/gl-infra/k8s-workloads/gitlab-com.
  • gitlab-com/gl-infra/k8s-workloads/gitlab-com!4996 (merged)
• Test uploading is working for gstg. Test by acting as one of the GCP configured accounts.
