This change refactors how our charts configure the
removal of the default echarts legend by collecting
the configuration in a single options object.

Tables with stacked enabled aligne contents to
the right of the table and wrap by breaking words.

This change documents this behavior with visual
snapshots.

Fixes a bug where label prop is always required even we allow for
slot usage. Marking label as not required.
