chore(tests): remove name dependency for mock_directive helper

What does this MR do?

This MR changes approach for stubbing directives in vue_mock_directive to make it compatible with Vue 3 compat

In Vue 3 directive name is no more passed to directive hooks, so let's "lock it" during creation :)
