Safer option - Litmus testing v2 log package in production

This is a safer alternative to - !1347 - it allows us to test whether the new labkit v2 log library will seamlessly work with our observability stack without incurring too much additional risk.

By duplicating some of these log lines, we can verify in production whether these lines are being ingested by our ElasticSearch log ingestion setup, and then we can proceed with rolling out a more comprehensive change such as - !1347

Note that the volume of these logs is negligible, so I don't expect this duplication to place a significant load on our logging infrastructure.
