Draft: Add additional logging checks to unit tests

What does this MR do?

Adds checks that logs are being created for calls.

Why was this MR needed?

We don't currently have checks in our tests for most of these logs. Adding coverage will allow us to be more certain that our logs are behaving as expected.

What's the best way to test this MR?

Passing CI sufficient.
