Docs update to demonstrate more complex Kubernetes config
What does this MR do?
We spent a long time working with a customer to identify the correct configuration to use and eventually found it in an issue because it wasn't very clear.
Why was this MR needed?
The example helps but it is difficult to understand how to nest Kubernetes volumes.
