Remove Sanity Version

What does this MR do and why?

Removes the Sanity version check.

Originally this was to test that the nightly image was built from a commit of the past 24 hours (or later if a weekend).

We no longer have a pipeline against the nightly image, this is integrated into the "master" pipeline runs, so this check is redundant and can be removed.
