Document prometheus redis/postgres/gitlab exporters
This goes with omnibus-gitlab!1118 (merged) omnibus-gitlab!1131 (merged) and omnibus-gitlab!1132 (merged)
This will likely need tidying in future, it can be simplified once this is all one by default.
