docs - Sort list of predefined variables in alphabetical order - replace and closes MR !23670

What does this MR do?

This MR is an update to MR 23670. I have synchronized my fork with the last upstream version so the branching is not done from a too old commit. MR 23670 should be rejected or closed. I sorted in ascending order the list of predefined variables in file doc/ci/variables/README.md The table with the predefined variables shows all the CI_P**** variables between CI_RUNNER and CI_REGISTRY; CI_REGISTRY is after CI_RUNNER.
