Various small docs adjustments after feedback

What does this MR do?

MR contains various small docs adjustments based on feedback from UX sessions as well as another round of lint fixes.

Also adds troubleshooting note about EKS Addons and Cluster Autoscaler, with the former potentially blocking the latter in some cases.

  • For Terraform changes: set up a previous version environment, then run a terraform plan with your new changes and ensure nothing will be destroyed. If anything will be destroyed and this can't be avoided please add a comment to the current MR.
