Make link check jobs chores again

What does this MR do and why?

Following: !4813 (merged), I don't think we succeeded in setting the jobs back to work in chores pipelines, so this MR does. See: https://gitlab.com/gitlab-org/gitlab-docs/-/pipelines/1312789500.

While here, we might as well update the Docker images we use.
