Set Ruby and Alpine as variables in single.Dockerfile

  • Set Ruby and Alpine as variables in single.Dockerfile.
  • Update the GitLab versions in the tests jobs and fix a wrong git command. The tests failed and showed an error we had in the tests jobs. I didn't use a separate MR, because we would need a change in single.Dockerfile to trigger the tests, so this was a great opportunity.
