Fix deploy of Gitpod main and stable images

What does this merge request do and why?

The MR brings back Gitpod image builds https://gitlab.com/gitlab-org/gitlab-development-kit/-/pipeline_schedules by fixing the variable that is used to tag the images.

Fixes #2005 (closed).
