Stop testing against Ruby 2.7 and start testing against Ruby 3.2
What does this merge request do and why?
Based on: gitlab-org/ruby/gems/gitlab_kramdown!84 (comment 1251789670), we'll be looking to Ruby 3.2 in the not too distant future, so we can begin to tackle low-hanging fruit now.
This runs GDK tests against Ruby 3.2, and stops running tests against Ruby 2.7.7.
